Ingredients

165 Gr Flour, 2 Gr Salt, 20 Gr Butter, 40 Ml Water, 1 Lt Frying Oil, Butter, 1 Finely Chopped Dried Onion, 2 Cloves Finely Chopped Garlic, 2 Finely Chopped Green Chilli Peppers, 5 Gr Finely Chopped Fresh Ginger, 1 Gr Turmeric Powder, 1 Gr Red Chilli Powder, 300 Gr Boiled Crushed Potatoes, 5 Gr Salt, 3 Gr Garam Masala Powder, 100 Gr Boiled Peas, 10 Ml Lemon Juice, 200 Gr Strained Yogurt, 10 Gr Finely Chopped Fresh Coriander, 2 Gr Seed Coriander, 100 Gr Brunoise Cucumber, 1 Gr Dried Mint, 2 Gr Salt, 10 Ml Extra Virgin Olive Oil.

Recipe Preparation

  1. For the dough, combine the butter, flour and salt, gradually add the water and knead the dough for 10 minutes until it forms a dough and rest for 1 hour.
  2. Meanwhile, melt the remaining butter in a pan and sauté the onion, garlic, ginger and chilli. Add dry spices and sauté for 1 more minute. Add the peas and potatoes, mix well and set aside to cool. 
  3. Divide the dough into 8 equal parts, roll out the dough into a circle and cut each circle into semicircles to form cones. Fill each cone with the filling, close them and fry them in the hot oil.    
  4. For the cucumber raita sauce, put yoghurt, fresh and seeded coriander, salt and lemon juice in a blender and blend. Then add cucumber, mint and olive oil. Serve with fried samosa fritters.
