Ingredients
165 Gr Flour, 2 Gr Salt, 20 Gr Butter, 40 Ml Water, 1 Lt Frying Oil, Butter, 1 Finely Chopped Dried Onion, 2 Cloves Finely Chopped Garlic, 2 Finely Chopped Green Chilli Peppers, 5 Gr Finely Chopped Fresh Ginger, 1 Gr Turmeric Powder, 1 Gr Red Chilli Powder, 300 Gr Boiled Crushed Potatoes, 5 Gr Salt, 3 Gr Garam Masala Powder, 100 Gr Boiled Peas, 10 Ml Lemon Juice, 200 Gr Strained Yogurt, 10 Gr Finely Chopped Fresh Coriander, 2 Gr Seed Coriander, 100 Gr Brunoise Cucumber, 1 Gr Dried Mint, 2 Gr Salt, 10 Ml Extra Virgin Olive Oil.
Recipe Preparation
- For the dough, combine the butter, flour and salt, gradually add the water and knead the dough for 10 minutes until it forms a dough and rest for 1 hour.
- Meanwhile, melt the remaining butter in a pan and sauté the onion, garlic, ginger and chilli. Add dry spices and sauté for 1 more minute. Add the peas and potatoes, mix well and set aside to cool.
- Divide the dough into 8 equal parts, roll out the dough into a circle and cut each circle into semicircles to form cones. Fill each cone with the filling, close them and fry them in the hot oil.
- For the cucumber raita sauce, put yoghurt, fresh and seeded coriander, salt and lemon juice in a blender and blend. Then add cucumber, mint and olive oil. Serve with fried samosa fritters.
