Crispy Duck

Ingredients

1 Whole Duck, 6 Chopped Shallots, 1 Lt Chicken broth, 500 Ml Soya sauce, 400 Ml Chinese rice wine, 50 Gr Honey, 5 Star anise, 2 Sticks or Powdered Cinnamon, 3 Bay leaves, 1 Orange peel, 1/3 Chopped Spring onion, 1/4 Julienne Spring onion, 400 Gr Julienne Cucumber, 2 Lt Cooking oil, 40 Ml Hoisin sauce, 20 Chinese pancakes.

Recipe Preparation

  1. Clean the duck from excess fat. Place it on a wire rack over the sink and slowly pour boiling water over it. Turn it over and do the same on that side and dry it thoroughly. 
  2. Put the chicken stock, soy sauce, wine, aniseed, cinnamon, bay leaf, honey, orange peel and chopped spring onion into a large pot and bring to the boil. When it starts to boil, add the duck and cook over low heat for about 1.5-2 hours.
  3. When the duck is cooked, remove it from the water and chill it in the fridge for 1 night until it dries well.
  4. Remove the duck meat from the bones, fry it together with the skin and serve with pancakes, hoisin sauce, cucumber and spring onion.
