Ingredients
1 Whole Duck, 6 Chopped Shallots, 1 Lt Chicken broth, 500 Ml Soya sauce, 400 Ml Chinese rice wine, 50 Gr Honey, 5 Star anise, 2 Sticks or Powdered Cinnamon, 3 Bay leaves, 1 Orange peel, 1/3 Chopped Spring onion, 1/4 Julienne Spring onion, 400 Gr Julienne Cucumber, 2 Lt Cooking oil, 40 Ml Hoisin sauce, 20 Chinese pancakes.
Recipe Preparation
- Clean the duck from excess fat. Place it on a wire rack over the sink and slowly pour boiling water over it. Turn it over and do the same on that side and dry it thoroughly.
- Put the chicken stock, soy sauce, wine, aniseed, cinnamon, bay leaf, honey, orange peel and chopped spring onion into a large pot and bring to the boil. When it starts to boil, add the duck and cook over low heat for about 1.5-2 hours.
- When the duck is cooked, remove it from the water and chill it in the fridge for 1 night until it dries well.
- Remove the duck meat from the bones, fry it together with the skin and serve with pancakes, hoisin sauce, cucumber and spring onion.
